Ceramic or induction
Induction heats the pan rather than the plate, so the cooktop surface stays cooler, but it needs a pan with a magnetic base: cast iron and most stainless steel pans work, non-magnetic pans do not. Ceramic takes any flat-based pan and holds heat after it is switched off, which suits simmering. A portable cooktop suits a caravan, a granny flat or a kitchen mid-renovation.
